Bánhmì11 is as simple as ABC.

A is for am thuc…and the art of eating, of looking at things past to move forward.

We grew up with it, taking it for granted as the small things that make up a way of life, until we were far away from it, enough to know and feel its gestalt. You can not summarize a cuisine, the same way you can not sum up a people, a culture, a history, in a few words. Perhaps we say, how the cuisine carries the culture, is how we should cook.

B is for bánh mìand the way a sandwich can be as old as Indochina and as new as London would have it.

We hear you don’t know what makes you fall in love with bánh mì – that the hot chilli sauce tickles your tongue; that the sprigs of coriander leave your appetite unsatiated. The taste, the texture, even the temperature, leaves you pondering.

C is for cà phê...and the hours you stay awake at night with shaky fingers.

In this part of the world, we still patiently wait for the coffee to drip. A thick, black, bitter liquid slowly seeps through tiny holes of the stainless steel filter, leaving a dense and moist mass on top that reminds of the flaming red soil of the Central Highlands that nurtured coffee beans to their fullness.

Bánhmì11 – The Dream Team

Bánhmì11 started out as a culinary venture of three Hanoians and a very patient mother who couldn’t satisfy their cravings for bánh mì in London. Over time, Bánhmì11 has drawn in a growing group of bánh mì lovers who keep serving great food and doing it in a fun way that ties us together.

The team includes: Anh Vu,  Van Tran, Mai Le, Ngoc Nguyen, Hanh Nguyen , Trang  Nguyen, Hoa Nguyen, Taavi Raidma
